Firstly, happy Tuesday. 🙂
In my challenge groups we really wanted to focus on new recipes this week. Which is something I always worry about with them. I don’t want them to get bored! When I was a brand new challenger myself with the 21 day fix, I was in the same position. I was scared to try recipes outside of the 21 day fix book or on the blog. I was SURE I couldn’t come up with a recipe on my own OR make one work with my magic containers.
It. got. old.
SO, this is a recipe I tried as a cheat meal. I then did my best to make changes and clean it up for my challengers! It’s absolutely delish! 🙂
Secondly, I want to give you the ORIGINAL recipe so you can see how I made adaptions. My container colors have come from the FIXate cookbook and 21 day fix book.
Creamy Mexican Soup-
Cook time: 2.5 hours on high (crockpot)
Servings: 8-10 servings
Ingredients: 2.5 lbs boneless skinless chicken breast, 2 cans black beans (rinsed/drained), 1 can of corn (drained), 2 cups salsa, shredded cheese, 8 oz. cream cheese, cooked rice.
Directions: Throw it all in the crockpot for 2 hours, pull the chicken out, shred it, and put it back in the crock pot for another half hour.

Cook time: 2.5 hours
- 1.5 lbs boneless, skinless chicken breasts
- 1 can of black beans (drained & rinsed)
- 1 cup of salsa (from the FIXate cookbook, OR Pico style)
- .5 can of corn (drained)
- .5-1 cup of strained plain greek yogurt -> here’s how!
- shredded cheese (blue container)
- .5 tsp. cumin
- salt & pepper to taste
- 1-2 RED
- 1 YELLOW
- 1 BLUE
I know, you’re wondering about your greens with the salsa. according to the fixate cookbook, salsa is a “free”. I would totally recommend throwing some good veggies in there if you like that, maybe some bell peppers? The original recipe also suggests putting the soup over some brown rice, totally up to you! 🙂 That’s another yellow. Recipes like these are always hard to strictly follow your containers. Don’t stress so bad, okay!
also, please remember that the yogurt straining process takes some time. You’ll really have to pre-prepare & strain your yogurt cheese. 😉
- Throw all the ingredients in the crockpot (MINUS the shredded cheese)
- about 2 hours later, pull the chicken out and shred it
- put the chicken back in for another half hour
- you can top your serving with shredded cheese
